The biggest problem I'm facing is how to structure such a big war, both in terms of in-universe geography, and plot progression. So the final book can't be about his forces being slowly pushed back, hemmed in, eliminated, until a final fart of a battle. Above all else, I want the evil god to come close to victory, or else the climax doesn't have impact. I want the heroes to lose ground and suffer defeats, but of course I also want victories. I want to have different theatres and countries, and I want a major ally to betray the good guys, severely changing everything. I also really want to devote an entire book to a fighting retreat after the good guys lose a major city, as their forces are scattered and being encircled. The details keep evolving, but I consistently want the first book to set up the conflict, and the main characters as they travel together, then end after the skirmish that opens up the war. There are lots of different scenarios and fantasy staples I want to cover: Big field battles, guerilla campaigns, sea battles, betrayals, magic, dragons, sieges, a character returning from the dead with increased power, and so on.
